Sheet Pan Honey Baked Broccoli And Chicken

For the last 6-8 months, I have been mostly a vegetarian-eating little to no meat. It’s been quite an interesting journey, filled with a lot of weird ups and downs! The hardest thing has been finding recipes that I can eat and easily add some protein for the fam, without cooking two completely different meals. And, this sheet pan honey baked broccoli with chicken checks both of those boxes. It was a family hit.

This is actually an adaptation of an old recipe I had on my blog; honey baked broccoli. That recipe was a simple veggie recipe. But, I decided to take that recipe one step further and create a full meal out it. Honey baked broccoli was something my kids always loved so I thought I would amp it up a bit and add some chicken. I serve it with soy sauce rice (it’s just rice with soy sauce). So, it’s kind of a sweet and salty type situation.

It’s SO easy to make!

Let’s get to the important stuff. This honey baked broccoli and chicken is SO easy to make. I mean any recipe that you cook strictly on a sheet pan is winning to me! Haha. Anyways, it’s really a two-step process. You bake the chicken for a little while, then after that, you add in the broccoli and bake for a little while longer. Done! And, since you cooked it on a parchment paper covered sheet pan, so, you won’t be slaving over dishes for hours. You’re welcome for the extra hour of life. Haha!

Honey Baked Broccoli and Chicken

Ingredients

  • 1 large head of broccoli
  • 2 chicken breasts
  • 1 tbsp of honey
  • 2 tbsp of olive oil
  • 2 tsp of salt
  • 1 tsp garlic powder
  • 1/2 tsp pepper
  • Pinch of Everything Seasoing from Trader Joes to taste.
  • Pinch of red pepper flakes
  • Soy Sauce

Instructions

  • Preheat oven to 450.
  • Clean and chop head of broccoli.
  • Place honey, olive oil, salt, pepper, and garlic powder in a small dish and mix.
  • Line a baking sheet with parchment paper.
  • Lightly pound out each chicken breast with a mallet and place on parchment covered pan.
  • Pour 1/2 of the honey mixture over the chicken breast (pour slowly so that the mixture doesn't just fall off the chicken breasts), and bake for 12 minutes on middle or top rack of oven.
  • Take half-baked chicken out and add broccoli to the pan. Pour the remaining 1/2 of honey mixture on top of the chicken. Mix broccoli with juices on the pan. Bake for 10 more minutes.
  • Turn oven to 475 degrees and finish baking for 3-5 minutes. Cooking time here will depend on how done the chicken already is. Dont over cook the chicken, this step is just to give the chicken some color and to crisp up the broccoli.
  • Serve over brown rice with soy sauce and finish with a pinch of red pepper flakes and Everything Seasoning from Trader Joes.
  • Serve immediately.
